At hut 16 on quai Lahillon in Andernos-les-Bains, Bleue is oyster farmer Axel Boudard's tasting hut, formerly known as L'Huître Bleue. The enlarged terrace overlooks the Bassin d’Arcachon, in the heart of the working harbour.
What's on the menu at Bleue?
The speciality remains oysters from the farm. Local media also mention prawns, whelks and Basque pâté, depending on the menu, as additions to seafood platters. The professional directory does not provide verifiable prices per dish: ask at the counter for the cost of a dozen, available oyster sizes and the day's selection.
The producer's speciality
The hut is attached to SCEA L'Huître Bleue, an oyster-farming business listed by the Arcachon-Aquitaine regional shellfish committee. Axel Boudard also runs the neighbouring Tamariou. Visitors come to taste seafood close to where it is farmed, rather than for a traditional restaurant with a long menu.
An extra detail
The farm also sells oysters at Dax market on Saturday mornings, ships within France and welcomes groups on request. The new Bleue identity and enlarged terrace have given this harbour hut more space.
